The Paquitamut is distinguished by its artisanal production and respect for viticultural tradition. The grapes are subjected to a 36-hour maceration, followed by fermentation with native yeasts at a controlled temperature in stainless steel tanks. This meticulous process, along with gentle filtration and a low level of sulfites, ensures that the wine maintains its purity and natural expression. The age of the vines and the care in their management result in a complex, gastronomic wine full of personality.
