The Bobal Negro is made from a rigorous selection of Bobal grapes from vineyards located in the upper area of Utiel-Requena, with very low yields that do not exceed 1 kg per strain. The harvest takes place in mid-October to ensure optimal ripeness of the grapes. After a pre-fermentation maceration at low temperatures (3ºC) for 4 days, the wine ferments at 26ºC and remains in contact with its pastes for a further 10 days to extract the maximum aromas and structure. 50% of the wine undergoes malolactic fermentation in lightly toasted French oak barrels, where it ages for 12 months, which adds complexity and elegance to its aromatic profile.
