The El Jefe is made from a manual harvest in mid-October, followed by a cold pre-fermentation maceration for 7-8 days at 5ºC. Alcoholic fermentation takes place in stainless steel tanks with native yeasts, followed by malolactic fermentation in French oak barrels. After a 15-day post-fermentation maceration, the wine is aged for at least a year in the bottle, where it continues to evolve and gain complexity. This wine has been clarified with products of plant origin, making it suitable for vegan consumers. Its slight filtration can generate some precipitate in the bottle, which is a sign of its minimal intervention in the winemaking process.
